Shalooli Tikki

 



Shalooli Tikki is a nutritious product of shaljam and mooli,as main ingredients and other vegetables.







Ingredients

Turnip(Shaljam)
  • Turnip (shaljam)           2 piece(medium size)
  • Radish(mooli)              1 piece (medium size)
  • Carrot                          2 or 3 pieces (medium size)
  • Onion                          1 small piece
  • Ginger                         1 small piece
  • Garlic                          3-5 flakes
  • Cinnamon Stick           1 small piece
  • Mace(Javitri)                2 small piece
  • Green chilli                  2-3 pieces
  • Garam masala              1/4 tsp
  • Coriander leaves          1 bunch

  • Salt to taste
  • Oil                               2 tbsp
  • Roasted gram powder  1 tbsp
  • Cornflour                    1tbsp
Preparation
  • Grate Turnip,Radish,Carrots and Ginger.
  • Keep grated vegetables in one bowl or plate.
  • Cut green chilly into small pieces
  • Chop onion into fine pieces.
  • Cut coriander leaves and garlic into small pieces.

 

 

 

 

 

    Method

  • Take a deep pan or cooker,add grated vegetables,cinnamon stick,garlic and javitri. Boil it for 15 to 20 minutes or 1 whistle.
  • Cool it,then strain extra water. Squeeze it so that water is drained out from the mixture totally.
  • Add to the above mixture salt,garam masala,roasted gram powder and cornflour and mix. Make a smooth dough.
  • Make small balls of similar size from the dough. 
  • Take one ball,keep it on one palm,flatten it with another palm,hollow it in middle and fill it with some chopped onion and Coriander. Mould it into a ball again,press lightly in middle giving shape of patty with care so that mixture does not come out of ball. Keep aside.
  • Repeat the process with other balls.
  • Now heat a flat pan,spread 1 tsp oil on the surface. Keep  4-5 Patties at a time on the pan.
  • Cook both sides till golden brown.
Serve hot with green Coriander chutney

Tricolor Sandwich

     Tricolor and multi flavour sandwich for family members in breakfast on a holiday or to arouse taste buds of your esteemed guests.




 Ingredients:

Sandwich bread
  [white or brown]        4 slice  for 1 sandwich

Paneer               50 gm
Cucumber or cabbage.    1
Capsicum.         1
Carrot.          2piece 
Tomato        2medium      
Green coriender or mint chutney.     2 -3 tbsp
Tomato sauce.     2-3tbsp
Lemon juice.        1 tsp
Chilli sauce.          1tbsp
Cheese.                 3-4 cubs
Black paper powder.    1 tsp
Butter               2tbsp
Salt to taste

Preparation:

Remove the side crusts off the slices if necessary.
Grate the paneer.
Grate the cheese.
Slice the tomatoes finely.mix black paper powder and 1 pinch salt








Peel off and grate cucumber. Mix 1/2 tsp lemon juice and   finnly chopped capsicum

Prepare green coriander chutney using green chilli.

Method:

Place one slice on a plate,.Add a layer of grated paneer & cheese.Place second slice over first one.Spread green chutney and add grated cucumber all over.Sprinkle salt.Add chilli sauce.
Place third slice on second one,spread tomato sauce and then tomato slices all over.
Take a fourth slice,spread thin layer of butter and place it as cover with buttered side down.



Once assembled,cut each one into 2 triangles and wrap each triangle with paper napkin.
Tricolor sandwich is ready.
     Serve immediately otherwise the sandwich will become saggy and difficult to hold.

Kachaudi---Chane ke Daal ki


 

      Ingredients:

  • Bengal gram       1 cup
    [chane ki daal]
  • Wheat flour         2 cup
  • Green chilli  3-4 pieces
  • Ginger     1 small piece
  • Green coriander leaves  1small bunch
  • Cumin seed                 1/2 tsp
  • Black pepper corn  7-8pieces
  •  Black cardamom      2 pieces       
  • Green cardamom   2-4 pieces
  • Cloves                   5-6 pieces
  • Red chilli powder       1/4 tsp
  • Ghee                             3tbsp
  • Oil  for fry                    2cup                            
  • Salt to taste


         Preparation:

  • Chop finely green chilly,coriander leaves and ginger.
  For filling--
  • Soak the chana daal for 6 -7 hours. Wash thoroughly and grind soaked chana daal along with ginger,cumin seeds, black & green cardamom, black pepper and cloves to get a smooth paste.
  • Heat 1 tsp oil in a pan. Add channa daal paste, chopped green chilly & red chilli,   salt, chopped green coriander leaves. Mix thoroughly. Saute for 5-6 minutes. When paste gets dried,close the flame.
  • Filling paste is ready.
For Kachaudi--
  •  Add warm ghee and salt to the wheat flour, mix well.Knead to a smooth,soft and little loose dough as is made for chapati.
 
Method:

  • Make small balls of wheat flour dough of equal sizes. 
  • Take one ball, place it on a rolling board,press with palm and roll out a little. 
  • Take it in one palm, place one spoon of daal paste in middle and close from all sides.
  • Now put it back on rolling board and roll it lightly with rolling pin so that daal does not breach.



  • Meanwhile heat oil in a deep fry pan on high flame. 
  • When steaming hot, deep fry the roll till light brown.Fry on both sides.
 
  • Repeat the process with other balls.
Kachaudi is ready.

Serve hot.
Eat it as snack with green coriander chutney or pickle at tea time,or,in meals.

Pin Wheel Sandwhich

It is a holiday.Kids and other family members crave something special in breakfast,leaving the housewife in a dilemma to search her memory disk! So Pin Wheel Sandwich is an option difficult to ignore!!

Ingredients:

  • Bread slice- 6-7 pcs
  • Coriander chutney- 1/2 cup
  • Tomato sauce- 1/2 cup
  • Paneer- 50 gms
  • Cheese- 50 gms
  • Butter- 3-4 tbps
  • Black pepper powder- 1/2 tsp
  • Salt to taste
  • Water- 2-3 cups

Preparation:

For chutney:
  • Coriander leaves- 1 bunch
  • Green chilli- 4-5 pcs
  • Ginger- 1 inch pc
  • Mango powder- 1/2 tsp
  • salt to taste
Mix all the things and grind them.

For cheese and paneer:
  • Grate cheese and paneer separately.Mix black pepper powder(1/4 tsp) in cheese and paneer separately.


Method:

  • Cut the edges of all bread slices.
  • Take warm water in a bowl.
  • Add salt to taste.
  • Dip 1 slice of bread into warm water,rinse it by pressing between palms,and then press it delicately by a roller(belan). Keep it separately on butter paper.Repeat the same process for other slices of bread.
  • Spread butter on rinsed slice,then spread layer of green chutney,thin layer of grated paneer,tomato sauce and grated cheese in that order.Make sure the spread should be smooth without lumps.
  • Now roll each slice and press edges against each other.
  • Keep all slices,covered in wet cloth,in the freezer for about 1 hr.
  • Cut the rolls into 1/2inch thick round pieces. 
Serve with tomato sauce and chilli sauce.
[Note:stuff inside bread can be chosen according to your own wish like cooked keema,grated cabbage,etc.]

Sabudana Khichadi [Fried Sago Mix]

Sabudana [Sago] Khichadi is a fast to cook, tasty and nutritious breakfast item liked by young or old alike.Even on occasions of fasting, it can be taken.


Ingredients:

  • Sabudana [Sago] 250 gm
  • Pea nuts 1cup
  • Potato 3-4medium
  • Cumin seeds 1/2tsp
  • Black pepper 1/2tsp
  • Ginger 1small pc
  • Green chilli 4-5pcs
  • Coriander leaves 1small bunch
  • Lemon 1-2pcs
  • Salt to taste {during fasting,use sendha namak [rock salt] }
  • Refined oil  4tbsp

Serves: 4

 

Preparation:

  • Wash sabudana 2-3 times and soak into 2 cup of water for at least 4-5 hours.
  • Then drain water and keep the sabudana aside.Keep in mind that the same should be moist till its use.With the time it will increase in volume.This is to be ascertained that pearls of sabudana should be soft.
  • Chop the green chilies finely into small pieces.
  • Roast peanuts in a heavy bottom pan, continuously stirring so that the same is not burnt.Then peel off the skin.Grind the peanuts for broken or coarse small pieces.
  • Boil the potatoes.Then mash coarsely.
  • Grind pepper.
  • Chop the coriander leaves finely.
  • Grate ginger. 
     


Method:

  • Heat refined oil in a deep fry pan on high flame and add cumin seeds.When it becomes red,add green chili,grated ginger and mashed potato.Mix and fry for 5-6 minutes.
  • Add salt and ground peanuts.Mix well again.Keep on stirring for 2-3 minutes.Add soaked sabudana.Mix well and fry with continuous stirring till its pearls turn transparent.
  • Add 1 tbsp lemon juice and ground black pepper.Mix well.
  • Close the flame.
  • Garnish with coriander leaves.
Serve hot.

Suji Cutlets

Now get ready for a yummy breakfast that your kids may just love...

 


Ingredients:

  • Suji  150 gms (1 cup)
  • Roasted peanuts  50 gms
  • Water  2 cups
  • Milk  1 cup
  • Salt to taste
  • Garam masala  1/2 tsp
  • Green chilli  4 pcs [finely chopped]
  • Ginger  small piece [grated]
  • Coriander leaves  2 tbps [finely chopped]
  • Ghee/refined oil to fry

Method:

    1. Heat slightly ghee/oil in a deep pan.
    2.  Add suji and fry for 2-3 mins on low flame.Ensure that suji 's colour is not changed.. Add salt.
    3. Add water & milk to the suji in the pan. Keep on stirring.
    4. When the mixture turns into dough,close the flame and let the mixture cool.
    5. Now mix it manually to make the dough smooth.
    6. Grind the roasted peanuts in a mixer. 
    7. Mix the ground peanuts,coriander leaves,green chilly,ginger and garam masala. Mix well.Add this mixture to the suji dough and again mix well. 
    8. Make small balls of the dough.You may change its shape into heart or oval or any other shape your kids may fancy!


    9. Take suji in a plate,spread it and roll all the balls into it.Keep aside. 
    10. Heat refined oil in the deep pan.
    11. Now deep fry one ball and see it does not break.If so,deep fry 3-4 balls at a time till they turn light brown.
    12. In case the ball founds breaking,prepare a thick solution of maida [2 tbps] & water [1/2 cup],then dip the balls into it and deep fry.It happens when dough is not prepared properly.

    Serve hot with tomato sauce, or, chutney of coriander or mint.

Bread Rolls

A fantastic breakfast for your culinary taste.

Ingredients:

  • Bread-6 pcs
  • Potato-250 gms
  • Peas-100 gms
  • Coriander leaves-50 gms(finely chopped)
  • Green chilli-4 pcs(finely chopped)
  • Red chilli-1/4 tsp
  • Mustard seed-1/2 tsp
  • Salt to taste
  • Mango powder(or chat masala)-1 tsp
  • Refined oil-200 ml(to fry)

Method:

  • Boil potatoes and mash them.
  • Heat oil(1 tbsp) in deep frying pan(kadahi).Add mustard seed,green chilli and peas.Let it cook for 4-5 minutes on low heat.
  • Add mashed potatoes,garam masala,red chilli,salt and chat masala.Mix well and fry for 2-3 minutes.Add coriander leaves and mix well.Keep it separately.
  • Dip bread pieces one at a time in water,take it out and place it between both the palms and squeeze it.
  • On a flattened piece of bread,place potato paste(1 tbsp) and roll it into egg shape.
  • Heat oil in deep frying pan(kadahi).Deep fry the rolls until they turn golden brown.
  • Serve hot with green coriander chutney or tomato sauce.

Cheese Bonda

  Enjoy this snack with your family,your friends and a home party

 

 

 

Ingredients:

  • Paneer-200 gms
  • Cheese-100 gms
  • Grated cheese-50 gms
  • Potato-2-3pcs(200gms)(medium size)
  • Bread-6-8 pcs
  • Salt to taste
  • Garam masala-1/4 tsp
  • Cornflour-3 tbsp
  • Poppy seed-3 tbsp
  • Sesame seeds-3 tbsp
  • Green chilli-3 pcs
  • Coriander leaves-50 gms
  • Milk-250 ml(1 bowl)
  • Refined oil-200 ml(to fry)

Method:

  • Mash paneer and cheese.


  • Boil the potatoes and mash them well.Mix mashed cheese,paneer and potato.
  •  Dip bread pieces one at a time in milk and rinse off the milk well from bread pieces.
  • Mix the bread pieces well into the mixture.Keep aside the milk left.
  • Add salt and garam masala in the mixture.Mix well to make a soft dough.Keep it aside.
  • Cut green chilli & coriander leaves.Mix well grated cheese,green chilli and half of the coriander leaves(for stuffing).Keep aside.
  • Make small balls(size of table tennis balls) from daugh and stuff the balls with grated cheese mixture.Make sure the balls have smooth surface with no cracks.
  • Make paste of cornflour with the milk left.
  • Dip balls in paste one by one.roll the balls in the mixture of sesame and poppy seeds.Keep them aside.
  • Heat the oil in deep frying pan(kadai) on high heat.Deep fry 3-4 balls at a time until they turn golden brown.  

  • Serve hot with chilli sauce and tomato sauce.
