Creamy Chicken Soup


     Among the soups,the chicken soup very popular among people of all age group.It is a low calorie,evergreen and yummy food.It is a rich source of calcium,hence nutritious too.A modified version is Creamy Chicken Soup!

Ingredients:

For Stock-
  • Chicken 500 gm
  •  [Avoid frozen chicken which gives lesser flavour.Also dark meat of chicken,i.e,thigh,leg etc provide strong flavour..]
  • Onion  1 big
  • Ginger  1 small
  • Water  8 cup
  • Bay leaves 2
  • Green cardamom 4 pieces
  • Cloves  4
  • Mace [javitri ]  1 leave
  • Salt  1/2 tsp

For Soup- 
  • Stock  6 cups
  • Butter  3 tsp
  • Milk  1 cup
  • Cream  1/4 cup
  • Cheese  1/2 cup grated
  • Grated Cheese
  • Corn flour or fine wheat flour [maida]  5 tsp
  • Black pepper  1/4 tsp
  • Salt to taste
  • Green coriander leaves  a few leaves.

Method:

For Stock-
  • Put all the ingredients in a pressure cooker and cook,with cover on,for about 10 minutes.Take out breast pieces and cook again with out cover,the remaining part till the solution becomes slightly thick.Strain the solution.The stock is ready.
  • Peel off meat of the breast pieces and keep separately.
    The filtered chicken pieces can be  used for masala chicken,kali mirch chicken,curry chicken curry etc.
For Soup-  
  • Heat the butter in a deep pan.
  • Add corn flour and fry for 2-3 seconds but the flour should not be brown.
  • Add the stock gradually and stirring at the same time so that granules are not formed and mixture is smooth.Cook till a little thick.Keep stirring.
  • Add breast chicken meat pieces,milk,salt and pepper.Bring to one boil.Close the flame.The soup is ready.
  • Put in serving bowls,pour 1 tsp cream,1 tsp of cheese and chopped coriander leaves in each bowl. 

Serve hot with or without soup sticks.

Murg Shorba (Chicken Mushroom Soup)

The word shorba is urdu version of soup and the recipe is gourmet version of soup, delicious and nutritious !!
 When it is a holiday,you & your family are at leisure and want to enjoy some special meal,then start with murg shorba!!

Ingredients

  • Chicken  breast  diced 500 gm
  • Mushroom   5-6 pieces [sliced]
  • Milk  1 cup
  • Butter  2 tbsps 
  • Olive or Refined oil  2 tsp
  • Salt as per taste 
  • Black pepper powder  1/2 tsp
  • Garam masala 1/2 tsp
  • Cornflour  11/2
  • Tej patta  3-4 leaves
  • Garlic clove 1 minced
  • Spring onions  4 [cut into fine pieces]
  • Carrot  2 [cut into fine pieces]


Items for Garnishing

  parsley [cut into fine pieces]

Serving  

  6 persons





Method


  • Wash properly chicken pieces.
  • Dip mushroom in hot water with salt for 15 minutes.
  • Boil chicken pieces, garlic with tej patta,garam masala in a pressure cooker for 15 minutes.Put off heat.When pressure is released,open the lid, check if chicken is cooked.Filter the same to get chicken stock.Put the filtered chicken pieces in a different pot.
  • Separate the boneless part of filtered chicken pieces so that shredded pieces are available.

  • Mix chicken stock and milk in the cooker.
  • Heat the butter in a deep pan and fry the mushroom & carrot for 5-6 minutes.
  • Add fried mushroom and cornflour in the mixture of chicken stock and milk.Boil on low flame till the mixture gets thick.Then mix the shredded chicken along with salt and black pepper powder.Boil again for 1 minute.The soup is ready.
  • Fry spring onions in oil and add to the soup.
  • Pour the soup into serving bowls.
  • Garnish with parsley leaves and fresh cream in each bowl.     

Serve hot with soup sticks.

Carrot Tomato Soup

Soup time!!!! Yes...for health & taste as well as easy to make,soup is a popular dish as a starter in every household.Moreover during exam times soups can be substituted for dinner.Here is recipe for such a soup.Enjoy...



Ingredients:

  • Carrot- 500 gm
  • Onion- 1 small size
Carrot and Onion
  • Tomato- 250 gm
  • Ginger- 1 small pc
  • Garlic- 3-4 cloves [optional]
  • Black pepper powder- 11/2 tsp
  • Salt to taste
  • Sugar- 2 tbsp

Items for Garnishing:

  • Green coriander leaves
  • Bread slices- 4 [cut into small slices]
  • Butter for fry 
  • Fresh cream or malai

Method:

  • Peel the carrots and ginger.Cut into small pieces.
  • Cut the onion and tomato into small pieces.
  • Mix carrot,ginger,tomato,garlic and onion in 500 ml of water,add salt & sugar.
  • Boil the mixture in a cooker for 2 whistles.
  • Grind well the boiled mixture.
Ground Mixture 
  • Filter the ground mixture.
Filtering
  • The soup is ready. 
For garnishing:
    • Fry the bread pieces in butter.to prepare bread crumbs
Bread Crumbs
    • Pour the soup in soup bowls.Spray black pepper powder on the soup.
    • Put a few bread crumbs and pour cream or malai into each bowl.
    • Garnish with coriander leaves.
  • Serve hot.
