Green Khichdi [ हरी खिचड़ी ]

      
 Spicy and non veg dishes are generally in demand in winter season.Even veg dishes ought to be hot and aromatic
! But here is one veg,slightly spicy & easy to cook recipe for wintery days when one does not prefer much venture in cooking.

 

Ingredients:



Rice  1 cup
Green peas  2 cup  
Turmeric powder  1/2 tsp
Garam masala powder  1/2 tsp
Hing  1 pinch
Cumin seeds  1/2 tsp
Ginger  1 small piece
Green garlic  3 sticks 
Green chili  3-4
Green coriander leaves  1 bunch
Tomato  3-4 medium
Potato  2 medium
Salt to taste
Pure ghee or refined oil  2 tbsp
Water  3 cup
Serves: 4 persons

Preparation:

  • Peel off green peas,wash and grind to thick grains [dardara] along with garlic & ginger. 
  • Chop tomatoes & green chili.
  • Peel off potatoes and chop in small square pieces.
  • Soak the rice for 1 hour.

Method:

  • Heat ghee in a pressure cooker.
  • Add hing & cumin seeds.Fry till cumin seeds turn brown.
  • Add tomato & green chili,fry till cooked.
  • Add turmeric powder,garam masala and peas paste,mix and stir for 2-3 minutes.
  • Add potato pieces,mix and keep stirring.
  • Add rice after draining water,mix well and fry again for 2-3 minutes.
  • Add water,chopped coriander leaves and salt.Mix.
  • Cover with the lid.Cook till one whistle.Close the flame and let the cooker be cool.
  • Remove lid.
  • Hari khichdi is ready.Remember more water is used in this khichdi than normal khichdi.

Serve the matar khichdi hot with roasted papad,coriander chutney and mango pickle.

Kathal Ka Pulao [Jack fruit Pulao]

Jack of all,master of many...such is this jack fruit...now a recipe of many one's liking:



Ingredients:


  • Kathal [jackfruit]- 1/2 kg [cut into cubes] 
  • Onion- 4 medium size,thinly sliced
  • Rice [soaked]- 21/2 cups
  • Green cardamom- 2-3 pieces
  • Clove- 5-6 pieces
  • Cinnamon- 1 small stick
  • Cumin seeds- 1 tsp
  • Black cardamom- 8 pieces
  • Onion paste- 2 tbsp
  • Garlic paste- 1 tsp
  • Ginger paste- 1 tsp
  • Red chilli Powder- 1/2 tsp
  • Red chilli- 2-3 pieces
  • Roasted coriander powder- 2 tsp
  • Garam masala- 1 tsp
  • Curd- 1/2 cup
  • Oil- 2 tbsp
  • Pure ghee- 2tbsp
  • Water- 2 cups
  • Salt to the taste

Method:

  1. Wash and soak rice 1/2 hour before preparation of pulao.
  2. Heat  half of the oil in a cooker on low flame.Then fry the sliced onion till it turns transparent.
  3. Add kathal & salt [1/4 tsp] and  fry till it turns golden brown.Put off the flame.
  4. Take out kathal of cooker and keep it separately in a dish.
  5. Now heat the oil in the cooker.
  6. Add all the above mentioned spices,fry for 1-2 seconds,then add onion paste,garlic paste & ginger paste.Mix well and fry till oil starts oozing in the cooker.
  7. Now add fried kathal,saute for 2-3 minutes.
  8. Add curd,mix and keep on stirring till oil gets separated in the cooker.
  9. Add rice,salt and garam masala. Mix well and fry for 2-3 minutes.
  10. Then add water up to level.Close the lid of the cooker.Put off the flame after one whistle.
The pulao is ready.


Serve hot with coriander chutney or raita.
[note: deep frying pan can be used instead of cooker but double the water i.e. 4 cups]

Mixed Veg Fried Khichdi

Nutritious,Healthy & Tasty Khichdi!!

My husband had tried this recipe which I suitably modified.





Ingredients:

  • Rice-300 gms

  • Arhar dal-100 gms

  • Potato-2 pcs(medium size )

  • Peas-100 gms

  • Carrot-100gms

  • Beans-50 gms

  • Cauliflower-100 gms

  • Calabash(lauki)-100 gms

  • Tomato-2 pcs

  • Onion-100 gms or 2 pcs

  • Green chilli-3-4 pcs

  • Turmeric powder(haldi)-1/2 tsp

  • Garam masala-1/4 tsp

  • Red chilli powder-1/4 tsp

  • Cumin(jeera) seeds-1/2 tsp

  • Pure ghee-2 tbsp

  • Salt to taste

  • Water 650ml

  • Fried red chilli for decoration

Note: 

  • Any seasonal vegetables can be used

  • To turn it into a non-veg dish,boiled chicken or boiled keema,sausages,etc(100gms) can be added in addition to vegetables.


Method:

  • Wash and soak the rice & arhar dal in water for half hour.Drain and keep aside.

  • Cut the onion into thin pieces and chop other vegetables into small pieces.Keep them aside.

     

  • Take pure ghee in a 3 litre cooker.Add cumin seeds & onion and fry it little.Add green chilli and other vegetables.Fry the mixture for 1-2 mins. 

     

     

     

  • Add salt,turmeric powder,red chilli powder,rice and arhar dal in cooker.Mix them thoroughly.Fry the mixture for 2 mins.

  • Add garam masala and water.Close the lid.

  • After first whistle,lower the flame and let it cook for 2 mins.

  • Close the flame and let the pressure be released.

  • Before serving decorate it with fried red chillis

  • Serve hot with taste enhancers

Taste Enhancers:

  • Curd or raita

  • Green pudina or coriander chutney

  • Papad and pickle

Egg Fried Rice



My kids and husband relish greatly the egg fried rice as I prepare it.Now I present it for Your taste buds.

Ingredients:

  • Egg-4 pcs

  • Boiled rice-250 gms

  • Cabbage(patta ghobi)-50 gms

  • Beans-50gms

  • Potato-2 pcs

  • Capsicum-1 pc

  • Cauliflower(ghobi)-50gms

  • Onion or spring onion-100 gms

  • Ginger paste-1 tsp

  • Green chilli-2-3 pcs(as per taste)

  • Red chilli powder-1/2 tsp(can add more as per taste)

  • Garam masala-1/4 tsp

  • Salt to taste

  • Refined oil-3 tbsp

  • Coriander(dhania) leaves for decoration

Method:

  • Heat the 1 tbsp of oil in a frying pan.Add sliced spring onion and little fry.Add ginger paste and chopped green chilli fry for few seconds.

  • Add eggs to mixture and fry little and scramble them.Add half of garam masala,half of red chilli and salt to taste and fry until cooked and mix well.Keep aside.

  • Heat 1 tbsp of oil in deep frying pan(kadahi).Add sliced potato and cook well for 2 mins.add chopped capsicum and beans and semi fry for half min.Keep separately.

  • Heat 1 tbsp of oil in 2 ltr deep frying pan(kadahi).Add chopped cabbage and fry little.Add both the mixtures.Fry little and mix well.

     

     

  •  Add rice,salt,red chilli and rest of garam masala and fry well.

  • Decorate with coriander leaves and serve hot.
