Mixed Veg Fried Khichdi

Nutritious,Healthy & Tasty Khichdi!!

My husband had tried this recipe which I suitably modified.





Ingredients:

  • Rice-300 gms

  • Arhar dal-100 gms

  • Potato-2 pcs(medium size )

  • Peas-100 gms

  • Carrot-100gms

  • Beans-50 gms

  • Cauliflower-100 gms

  • Calabash(lauki)-100 gms

  • Tomato-2 pcs

  • Onion-100 gms or 2 pcs

  • Green chilli-3-4 pcs

  • Turmeric powder(haldi)-1/2 tsp

  • Garam masala-1/4 tsp

  • Red chilli powder-1/4 tsp

  • Cumin(jeera) seeds-1/2 tsp

  • Pure ghee-2 tbsp

  • Salt to taste

  • Water 650ml

  • Fried red chilli for decoration

Note: 

  • Any seasonal vegetables can be used

  • To turn it into a non-veg dish,boiled chicken or boiled keema,sausages,etc(100gms) can be added in addition to vegetables.


Method:

  • Wash and soak the rice & arhar dal in water for half hour.Drain and keep aside.

  • Cut the onion into thin pieces and chop other vegetables into small pieces.Keep them aside.

     

  • Take pure ghee in a 3 litre cooker.Add cumin seeds & onion and fry it little.Add green chilli and other vegetables.Fry the mixture for 1-2 mins. 

     

     

     

  • Add salt,turmeric powder,red chilli powder,rice and arhar dal in cooker.Mix them thoroughly.Fry the mixture for 2 mins.

  • Add garam masala and water.Close the lid.

  • After first whistle,lower the flame and let it cook for 2 mins.

  • Close the flame and let the pressure be released.

  • Before serving decorate it with fried red chillis

  • Serve hot with taste enhancers

Taste Enhancers:

  • Curd or raita

  • Green pudina or coriander chutney

  • Papad and pickle

Egg Fried Rice



My kids and husband relish greatly the egg fried rice as I prepare it.Now I present it for Your taste buds.

Ingredients:

  • Egg-4 pcs

  • Boiled rice-250 gms

  • Cabbage(patta ghobi)-50 gms

  • Beans-50gms

  • Potato-2 pcs

  • Capsicum-1 pc

  • Cauliflower(ghobi)-50gms

  • Onion or spring onion-100 gms

  • Ginger paste-1 tsp

  • Green chilli-2-3 pcs(as per taste)

  • Red chilli powder-1/2 tsp(can add more as per taste)

  • Garam masala-1/4 tsp

  • Salt to taste

  • Refined oil-3 tbsp

  • Coriander(dhania) leaves for decoration

Method:

  • Heat the 1 tbsp of oil in a frying pan.Add sliced spring onion and little fry.Add ginger paste and chopped green chilli fry for few seconds.

  • Add eggs to mixture and fry little and scramble them.Add half of garam masala,half of red chilli and salt to taste and fry until cooked and mix well.Keep aside.

  • Heat 1 tbsp of oil in deep frying pan(kadahi).Add sliced potato and cook well for 2 mins.add chopped capsicum and beans and semi fry for half min.Keep separately.

  • Heat 1 tbsp of oil in 2 ltr deep frying pan(kadahi).Add chopped cabbage and fry little.Add both the mixtures.Fry little and mix well.

     

     

  •  Add rice,salt,red chilli and rest of garam masala and fry well.

  • Decorate with coriander leaves and serve hot.
